A Santiago Origin

Originally from Santiago de Compostela, Manuel opened the doors of El Canario in Chapela, quickly turning it into an absolute reference of gastronomy and social life in the Rías Baixas.

1960s

The Seafood Visionary

He was the pioneer in introducing seafood to major celebrations, bringing the custom of accompanying banquets with up to seven varieties of seafood—a trend that today is a hallmark of our land.

More than 120 Events per Year

His vision allowed him to achieve historic figures. Long before the term "catering" became professionalized, Manuel was already ahead in the field.
